  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 can (15 oz) pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan or line it with parchment paper.
  3. In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Whisk until smooth, about 1-2 minutes.
  4. Beat in the eggs one at a time until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
  6. Gradually add the dry mixture to the wet mixture, stirring until just combined. Do not overmix!
  7. Fold in the pumpkin puree and vanilla extract until fully incorporated.
  8. Pour the batter into your prepared pan, spreading evenly. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before frosting.
