A comforting and flavorful dish featuring rotini pasta, Cajun garlic butter chicken, and creamy parmesan sauce.

- 8 ounces Rotini Pasta
- 1 pound Chicken Breast, boneless and skinless
- 4 tablespoons unsalted Butter
- 2 tablespoons Cajun Seasoning
- 4 cloves Garlic, minced
- 1 cup Heavy Cream
- 1 cup Parmesan Cheese, freshly grated
- Salt and Pepper, to taste
- Chopped Parsley, for garnish
Instructions
- In a large pot, bring salted water to a boil. Add the rotini and cook according to package directions until al dente (7-9 minutes). Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Season the chicken breasts with Cajun seasoning, salt, and pepper. Cook for about 6-7 minutes on each side until golden brown. Remove from pan and slice into bite-sized pieces.
- In the same skillet, add the remaining butter and melt. Sauté the minced garlic for about 1 minute until fragrant.
- Lower the heat and slowly add the heavy cream, then stir in the Parmesan cheese. Gradually add reserved pasta water until reaching desired consistency.
- Add the rotini and chicken to the sauce, tossing until well-coated. Allow to mix over low heat for another 2-3 minutes.
- Sprinkle chopped parsley atop the dish and serve immediately.
Notes
Feel free to substitute chicken with shrimp or mushrooms for a vegetarian option. Use half-and-half or a plant-based cream alternative for a lighter version.
