Description

A comforting and flavorful dish featuring rotini pasta, Cajun garlic butter chicken, and creamy parmesan sauce.


Ingredients

  • 8 ounces Rotini Pasta
  • 1 pound Chicken Breast, boneless and skinless
  • 4 tablespoons unsalted Butter
  • 2 tablespoons Cajun Seasoning
  • 4 cloves Garlic, minced
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese, freshly grated
  • Salt and Pepper, to taste
  • Chopped Parsley, for garnish

Instructions

  1. In a large pot, bring salted water to a boil. Add the rotini and cook according to package directions until al dente (7-9 minutes). Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Season the chicken breasts with Cajun seasoning, salt, and pepper. Cook for about 6-7 minutes on each side until golden brown. Remove from pan and slice into bite-sized pieces.
  3. In the same skillet, add the remaining butter and melt. Sauté the minced garlic for about 1 minute until fragrant.
  4. Lower the heat and slowly add the heavy cream, then stir in the Parmesan cheese. Gradually add reserved pasta water until reaching desired consistency.
  5. Add the rotini and chicken to the sauce, tossing until well-coated. Allow to mix over low heat for another 2-3 minutes.
  6. Sprinkle chopped parsley atop the dish and serve immediately.

Notes

Feel free to substitute chicken with shrimp or mushrooms for a vegetarian option. Use half-and-half or a plant-based cream alternative for a lighter version.
