Description

A rich and flavorful Italian soup with savory sausage, creamy broth, and al dente ditalini pasta.


Ingredients

Scale
  • 1 lb Italian sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and freshly cracked black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the Italian sausage, breaking it up and cooking until browned, about 5-7 minutes. Remove the sausage and set aside.
  3. Sauté the diced onion and garlic in the pot until soft and fragrant.
  4. Stir in the diced tomatoes, chicken stock, basil, and oregano. Return the sausage and bring to a gentle simmer for about 10 minutes.
  5. Add the ditalini pasta and cook until al dente, about 8-10 minutes.
  6. Reduce heat, stir in the heavy cream and grated Parmesan cheese, and mix until creamy.
  7. Season with salt and pepper to taste, garnish with parsley, and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Can be made a day in advance for deeper flavors.
