Description

A heavenly sugar cookie recipe inspired by the classic Panera Bread treat, with a chewy yet crispy texture and a delightful hint of almond.


Ingredients

  • 1 cup unsalted butter, softened to room temperature
  • 3/4 cup confectioners’ sugar
  • 2 cups all-purpose cake flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the softened butter and confectioners’ sugar together until light and fluffy, about 2-3 minutes.
  3. Add the vanilla and almond extract, mixing until well combined.
  4. In a separate bowl, whisk together the cake flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  5. Use a tablespoon or cookie scoop to portion the dough onto prepared baking sheets, leaving space for spreading.
  6. Sprinkle a little sugar on top of each cookie dough ball before baking.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 1 week. For longer storage, freeze individual cookies for up to 3 months.
