Description
A refreshing blend of fragrant pandan and zesty lemongrass, topped with fun jelly cubes, perfect for hot summer days.
Ingredients

- 5–6 fresh pandan leaves
- 2 stalks lemongrass
- 1.5 L water
- Sugar or simple syrup to taste
- 6 additional pandan leaves (for jelly)
- 1.5 cups water (for blending)
- 1.5 tsp agar-agar powder
- 3–4 tablespoons sugar (for jelly)
Instructions
- Boil water: Pour 1.5 L of water into a pot and set it over high heat.
- Prepare pandan: Take the pandan leaves and tie them into loose knots, then add to boiling water.
- Bruise the lemongrass: Smash the stalks lightly and cut into 1-inch pieces, adding to the pot.
- Simmer: Reduce heat and let it simmer for 15-20 minutes until lightly green.
- Sweeten: Add sugar to taste.
- Strain and chill: Strain into a pitcher, cool, then refrigerate.
- Blend the pandan leaves: Blend 6 pandan leaves with 1.5 cups of water until finely mixed.
- Cook the agar-agar: Add agar-agar to the pandan juice and heat to boil.
- Sweeten: Stir in 3-4 tablespoons of sugar until dissolved.
- Set the jelly: Pour into a mold and let cool to set.
- Cut into cubes: Unmold and cut the jelly into small cubes.
- Layer jelly cubes in a glass, pour chilled tea over, and serve with ice.
Notes
For best flavor, use fresh ingredients. The jelly cubes are best enjoyed fresh.
