Description
A comforting Thai-style breakfast featuring crispy pan-fried eggs, seasoned meats, and a hint of spice.
Ingredients

- 1 Tbsp unsalted butter
- 2 large eggs
- Chinese sausage, sliced
- Vietnamese ham (cha lua), sliced
- 120g ground pork, beef, or chicken
- ½ Tbsp oyster sauce
- 1 tsp Maggi Seasoning or Golden Mountain Sauce
- 1 finely grated clove of garlic (optional)
- ½ green onion, chopped
- Optional condiments: White or black pepper, Sriracha hot sauce, ketchup, or Maggi Seasoning
Instructions
- Combine the ground meat, oyster sauce, Maggi Seasoning, and garlic in a bowl. Mix well.
- Cook by adding 3 tablespoons of water to a saute pan and bringing to a boil over medium heat.
- Add the meat mixture and cook until fully cooked, about 5-7 minutes, stirring frequently.
- Slice the Chinese sausages and Vietnamese ham.
- Sear the sliced sausages and ham until browned, approximately 3-5 minutes.
- Heat your pan over medium-low heat and add butter. Wait until melted and bubbling.
- Crack the eggs gently into the pan, being careful not to break the yolks.
- Lay the sautéed sausages, ham, and ground meat on top of the eggs.
- Cover the pan with a lid and let steam for about 3-5 minutes until the egg whites are fully cooked.
- Garnish with additional green onions and a sprinkle of white or black pepper.
- Enjoy with crusty bread or your favorite condiments on the side!
Notes
For best flavor, use high-quality sausage and ham. Store leftovers in an airtight container for up to two days.
