Ingredients

    • 4 cod fillets (about 6 oz each)

    • 2 tablespoons olive oil

    • 1 pint cherry tomatoes, halved

    • 3 cloves garlic, minced

    • 1/4 cup white wine (optional)

    • 1/4 cup fresh basil, chopped

    • 1 tablespoon lemon juice

    • Salt and pepper, to taste

    • 1/4 teaspoon red pepper flakes (optional)

  • Lemon wedges, for serving


Instructions

  1. Prep fish: Pat cod dry. Season with salt/pepper, then lightly dust with flour.
  2. Sear cod: Heat oil in large skillet over medium-high. Cook cod 3-4 mins per side until golden and 145°F (63°C) internal temp. Transfer to plate.
  3. Make sauce: In same skillet, add garlic and tomatoes. Sauté 2 mins until tomatoes blister. Deglaze with wine, scraping browned bits.
  4. Finish: Stir in basil, capers, lemon zest/juice, and pepper flakes. Simmer 1 min.
  5. Serve: Spoon sauce over cod. Garnish with parsley and lemon wedges.

Notes

  • Substitutions: Use halibut or sea bass instead of cod.
  • Crispier skin: Leave skin on; press with spatula while cooking.
