A refreshing, dairy-free twist on the classic mint chocolate chip ice cream, made with wholesome ingredients like avocado and pitted dates.

- 1 cup pitted dates (160g), soaked
- 1/2 large avocado
- 1 cup packed spinach (optional)
- 1/4 cup collagen peptides (omit for vegan)
- 1 can full fat coconut milk (13.5oz)
- 1 1/2 tsp peppermint flavoring
- 1 tsp vanilla extract
- A pinch of salt
- 1/4 cup dark chocolate, chopped
Instructions
- Soak the dates in warm water for 5-10 minutes.
- Blend soaked dates, avocado, spinach (if using), collagen peptides, coconut milk, peppermint flavoring, vanilla, and salt in a blender.
- Churn the mixture in an ice cream maker for 20-30 minutes until soft-serve consistency.
- Add chopped dark chocolate and fold it into the ice cream.
- Freeze or serve immediately.
Notes
For best texture, let the ice cream sit at room temperature for 10-15 minutes before scooping.
