Description

Delicious and healthy ice cream bars made with coconut cream and natural sweeteners, perfect for summer treats without the guilt.


Ingredients

Scale
  • 1 and 1/2 cups coconut cream
  • 1/4 cup sunflower seed butter (unsweetened)
  • 1/4 cup raw honey
  • 1 tsp vanilla extract
  • 6 oz dark chocolate (70% cocoa or higher)
  • 1 tsp coconut oil

Instructions

  1. Combine and blend the coconut cream, sunflower seed butter, raw honey, and vanilla extract until smooth.
  2. Prepare the molds by pouring the mixture into popsicle molds or small paper cups.
  3. Freeze the mixture for at least 4 hours; overnight is ideal.
  4. Melt the dark chocolate and coconut oil in a small saucepan over low heat.
  5. Remove the pops from their molds and dip them into the melted chocolate.
  6. Set the coated bars in the freezer for 5 to 10 minutes until the chocolate hardens.
