Delicious and healthy ice cream bars made with coconut cream and natural sweeteners, perfect for summer treats without the guilt.
Ingredients

- 1 and 1/2 cups coconut cream
- 1/4 cup sunflower seed butter (unsweetened)
- 1/4 cup raw honey
- 1 tsp vanilla extract
- 6 oz dark chocolate (70% cocoa or higher)
- 1 tsp coconut oil
Instructions
- Combine and blend the coconut cream, sunflower seed butter, raw honey, and vanilla extract until smooth.
- Prepare the molds by pouring the mixture into popsicle molds or small paper cups.
- Freeze the mixture for at least 4 hours; overnight is ideal.
- Melt the dark chocolate and coconut oil in a small saucepan over low heat.
- Remove the pops from their molds and dip them into the melted chocolate.
- Set the coated bars in the freezer for 5 to 10 minutes until the chocolate hardens.
