Deliciously healthy muffins made with ripe bananas and coconut flour, perfect for a paleo diet.
Ingredients

- 3 ripe bananas
- 3 eggs
- 1/4 cup refined coconut oil or melted butter
- 3/4 cup coconut flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp ground nutmeg (optional)
- 1/8 tsp sea salt
Instructions
- Preheat the oven to 350°F (175°C).
- Line a muffin pan with paper liners or grease each section.
- Mash the bananas in a large bowl until smooth.
- Add eggs and coconut oil/butter to the mashed bananas; stir until well combined.
- Add coconut flour, baking soda, cinnamon, nutmeg, and sea salt; mix until a thick batter forms.
- Divide the batter evenly into the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool completely on a wire rack.
Notes
For a flavor boost, you can add chocolate chips or nuts. Store in an airtight container for up to a week or freeze for longer storage.
