- 8 large eggs, room temperature, beaten

- 1/2 cup (119 g) heavy whipping cream, room temperature

- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- For Topping:
- 1/2 cup (62.5 g) all-purpose flour
- 1/2 cup (100 g) light brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1/2 cup (113 g) unsalted butter, melted
- For Serving:
- Confectioners’ sugar, for garnish
- Pure maple syrup, for serving
Instructions
- Prep the baking dish: Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
- Layer the bread: Add the cubed brioche bread to the dish in an even layer.
- Make the custard: In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla, cinnamon, and kosher salt until smooth and fully combined.
- Combine with bread: Pour the egg mixture evenly over the bread cubes, gently pressing down with a spatula to ensure all the bread is soaked in custard. Cover and refrigerate for at least 4 hours, ideally overnight.
- Prepare the topping: In a medium bowl, whisk together the flour, brown sugar, cinnamon, and kosher salt for the topping. Add the melted butter and mix until crumbly. Cover and refrigerate until ready to bake.
- Bake: Remove the casserole from the refrigerator. Sprinkle the prepared topping evenly over the soaked bread cubes. Bake uncovered for 45-55 minutes, until the top is golden brown and the center is set.
- Rest and serve: Let the casserole rest for 10 minutes before serving. Dust with confectioners’ sugar and drizzle generously with pure maple syrup.

Ensure all liquids (milk, cream, eggs) are at room temperature; this helps combine smoothly. Feel free to use gluten-free bread if needed.
