  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • For Topping:
  • 1/2 cup (62.5 g) all-purpose flour
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/2 cup (113 g) unsalted butter, melted
  • For Serving:
  • Confectioners’ sugar, for garnish
  • Pure maple syrup, for serving

Instructions

  1. Prep the baking dish: Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Layer the bread: Add the cubed brioche bread to the dish in an even layer.
  3. Make the custard: In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla, cinnamon, and kosher salt until smooth and fully combined.
  4. Combine with bread: Pour the egg mixture evenly over the bread cubes, gently pressing down with a spatula to ensure all the bread is soaked in custard. Cover and refrigerate for at least 4 hours, ideally overnight.
  5. Prepare the topping: In a medium bowl, whisk together the flour, brown sugar, cinnamon, and kosher salt for the topping. Add the melted butter and mix until crumbly. Cover and refrigerate until ready to bake.
  6. Bake: Remove the casserole from the refrigerator. Sprinkle the prepared topping evenly over the soaked bread cubes. Bake uncovered for 45-55 minutes, until the top is golden brown and the center is set.
  7. Rest and serve: Let the casserole rest for 10 minutes before serving. Dust with confectioners’ sugar and drizzle generously with pure maple syrup.
