- 2 medium oranges
- 1/4 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 2 large eggs, room temperature
- 1 tablespoon lemon juice
Instructions
- Grate the skin of the oranges to get 1 tablespoon of zest.
- Juice the oranges to get about 1/2 cup of juice.
- In a stand mixer, beat the butter and sugar at medium speed until blended and fluffy (about 3 minutes).
- Add eggs one at a time, beating until fully incorporated after each addition.
- Gradually mix in the orange juice and lemon juice until combined.
- Stir in the orange zest.
- Transfer the mixture to a saucepan over medium heat. Cook, whisking constantly, until it thickens and reaches 170°F (77°C), about 14-16 minutes.
- Remove from heat and transfer to a heat-safe bowl. Cover the curd with plastic wrap tightly pressed against the surface and chill in the refrigerator for at least 2 hours before serving.
Notes
Ensure butter and eggs are at room temperature for better emulsification. Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.
