Description

These cookies combine the bright flavors of orange and the creaminess of ricotta for a soft, decadent treat.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 4 teaspoons orange zest
  • 1 large egg
  • 1 cup whole milk ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 cup mini semi-sweet chocolate chips
  • 1 cup confectioners’ sugar
  • 2 tablespoons fresh orange juice

Instructions

  1. Whisk the dry ingredients: In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. Cream butter and sugar: In a stand mixer, beat together the sugar, butter, and orange zest on medium speed until light and fluffy (about 3-5 minutes).
  3. Incorporate the egg: Add the egg and mix well until fully incorporated.
  4. Add ricotta and vanilla: Add the ricotta cheese and vanilla extract, mixing until smooth.
  5. Combine dry ingredients: Gradually add the flour mixture to the wet ingredients and mix on low speed until just combined.
  6. Fold in chocolate chips: Gently fold in the mini chocolate chips.
  7. Chill the dough: Cover the dough with plastic wrap and chill in the refrigerator for 1-2 hours.
  8. Preheat oven: Preheat your oven to 350°F and line baking sheets with parchment paper.
  9. Scoop the dough: Scoop tablespoons of dough onto the baking sheets, leaving space between each cookie.
  10. Bake: Bake for 13-14 minutes, until lightly golden.
  11. Cool: Allow cookies to cool on the baking sheet before transferring to a wire rack.
  12. Prepare the glaze: Whisk together confectioners’ sugar and orange juice and drizzle over cooled cookies.
