Instructions
- In a large pot over medium heat, heat the olive oil. Once hot, add the sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Pour in the chicken or vegetable broth, bring to a gentle simmer, stirring occasionally for about 3 minutes.
- Toss in the gnocchi, cook according to package instructions (typically 2-3 minutes) until they float to the top and are tender.
- Slowly stir in the heavy cream and grated Parmesan cheese until melted and combined.
- Fold in the spinach, cooking just until wilted, about 1-2 minutes.
- Season with salt and pepper to taste. Serve warm with an extra sprinkle of Parmesan.
Notes
