Description

A comforting one-pot soup that combines seasoned ground turkey, tender cabbage, and hearty rice for a warm family classic.


Ingredients

  • 2 1/2 tbsp olive oil
  • 2 lb ground turkey
  • 5 cups cabbage, chopped into 1-inch pieces
  • 1 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1/4 cup long-grain white rice
  • 1 cup onion, diced into 1/2-inch pieces
  • 1 1/4 tsp Italian seasoning
  • 3/4 cup carrots, sliced into 1/4-inch rounds
  • 5 cups beef broth
  • 14.5 oz diced tomatoes, canned
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1/4 tsp red pepper flakes
  • Fresh parsley, for garnish

Instructions

  1. Heat 2 1/2 tablespoons of olive oil in a large pot over medium-high heat. Add the ground turkey and cook until fully cooked and lightly browned, about 8-10 minutes.
  2. Stir in salt and black pepper. Add diced onions and sliced carrots to the pot, cooking until softened, about 5-7 minutes.
  3. Sprinkle in Italian seasoning and paprika, cooking for 1 minute to bloom the spices.
  4. Mix in tomato paste and cook for 2 minutes.
  5. Pour in 1/2 cup beef broth, scraping the bottom of the pot to release browned bits.
  6. Add remaining beef broth, diced tomatoes, Worcestershire sauce, rice, cabbage, bay leaves, and red pepper flakes. Stir well.
  7. Increase heat to high and bring to a boil. Reduce heat and simmer uncovered for about 35 minutes.
  8. After cooking, remove bay leaves, adjust seasoning if needed, and garnish with fresh parsley before serving.

Notes

For optimal flavor, make sure the ground turkey is at room temperature before cooking. This soup can be stored in an airtight container in the refrigerator for up to 4 days, or frozen for up to 3 months.
