Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian sausage, casing removed
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 12 oz penne pasta
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped (garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add Italian sausage and cook for 5-7 minutes until browned.
  3. Stir in minced garlic and red pepper flakes; cook for 1 minute until fragrant.
  4. Pour in chicken broth and heavy cream; bring to a gentle simmer for 2-3 minutes.
  5. Stir in penne pasta, cover, and cook for 10-12 minutes until al dente.
  6. Remove the lid, add spinach and Parmesan, stir until wilted, and season to taste.

Notes

For best results, use fresh ingredients and reheat leftovers gently with a splash of broth.
