- 1 lb Italian sausage, casing removed
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- 3 cups chicken broth
- 1 cup heavy cream
- 12 oz penne pasta
- 2 cups fresh spinach, chopped
- ½ cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Fresh parsley or basil, chopped (garnish)
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add Italian sausage and cook for 5-7 minutes until browned.
- Stir in minced garlic and red pepper flakes; cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream; bring to a gentle simmer for 2-3 minutes.
- Stir in penne pasta, cover, and cook for 10-12 minutes until al dente.
- Remove the lid, add spinach and Parmesan, stir until wilted, and season to taste.

For best results, use fresh ingredients and reheat leftovers gently with a splash of broth.
