- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper, to taste
- 1/2 cup jalapeños, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup chicken broth
- 2 cloves garlic, minced
- 1 tablespoon butter
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix the garlic powder, smoked paprika, cumin, salt, and pepper. Rub this seasoning mix on both sides of the chicken breasts.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for 3-4 minutes on each side until browned. Remove the chicken from the skillet.
- In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sliced jalapeños, sauté for 1-2 minutes.
- Stir in cream cheese and sour cream until smooth.
- Pour in chicken broth and stir until the sauce thickens. Return the seared chicken to the skillet.
- Sprinkle shredded cheddar cheese over the chicken.
- Transfer the skillet to the oven and bake for 15-20 minutes until the chicken is cooked through and the cheese is melted.
- Garnish with chopped cilantro and serve with lime wedges.
Notes
Make sure to use room temperature cream cheese for easy mixing. Store leftovers in an airtight container for up to 3 days.
