Description

A delightful balance of creamy flavors and spicy jalapeños, this one pan dish is perfect for busy weeknights and family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1/2 cup jalapeños, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the garlic powder, smoked paprika, cumin, salt, and pepper. Rub this seasoning mix on both sides of the chicken breasts.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for 3-4 minutes on each side until browned. Remove the chicken from the skillet.
  4. In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sliced jalapeños, sauté for 1-2 minutes.
  5. Stir in cream cheese and sour cream until smooth.
  6. Pour in chicken broth and stir until the sauce thickens. Return the seared chicken to the skillet.
  7. Sprinkle shredded cheddar cheese over the chicken.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until the chicken is cooked through and the cheese is melted.
  9. Garnish with chopped cilantro and serve with lime wedges.

Notes

Make sure to use room temperature cream cheese for easy mixing. Store leftovers in an airtight container for up to 3 days.
