- 4 eggs
- 1/3 cup olive oil
- 1 cup plain flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- Black pepper to taste
- 2.5 cups grated zucchini (about 400g)
- 3 scallions (finely sliced)
- 3 slices of bacon (optional)
- ½ cup cheddar cheese (grated plus extra for topping)
- ½ cup feta (crumbled)
- 1 tablespoon fish sauce
- 2 teaspoons chili flakes
- 1 tablespoon everything bagel seasoning or sesame seeds (optional)
- Zest of 1 lemon (optional)
Instructions
- Prepare your loaf pan: Line your loaf pan with parchment paper and preheat your oven to 400°F (200°C fan).
- Cook the bacon (if using): Add the bacon to a medium-high heat pan and cook for about 5 minutes until crispy. Remove from heat and chop.
- Mix the zucchini bread: In a large bowl, whisk eggs until fluffy. Add olive oil, flour, baking powder, fish sauce, and salt. Stir in zucchini, scallions, chili flakes, bacon, cheddar, feta, black pepper, and lemon zest (if using). Combine until no flour streaks remain.
- Transfer to your tin: Pour the mixture into the prepared loaf pan, adding extra cheese and seasoning on top.
- Bake the zucchini bread: Bake for 45-50 minutes until golden and a skewer comes out clean. Let cool for 5 minutes before transferring to a wire rack.
- Slice and serve: Once cooled, slice the bread and serve with soft butter or roasted garlic butter.
Notes
For a healthier option, substitute half of the plain flour with whole-wheat flour or almond flour.
