- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and black pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add in your diced onion, carrots, and celery and let them cook down for about 5 minutes until softened.
- Stir in the minced garlic and let it cook for another minute. Add the dried thyme and basil.
- Pour in the chicken broth and bring it to a gentle boil.
- Reduce the heat and toss in your shredded chicken and gnocchi. Simmer for 5-7 minutes.
- Add the fresh spinach and pour in the heavy cream. Cook for another 2-3 minutes.
- Season to taste with salt and black pepper. Serve immediately.
Notes
Feel free to customize with different vegetables or spices. For a vegetarian option, replace chicken with chickpeas and use vegetable broth.
