Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and black pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add in your diced onion, carrots, and celery and let them cook down for about 5 minutes until softened.
  2. Stir in the minced garlic and let it cook for another minute. Add the dried thyme and basil.
  3. Pour in the chicken broth and bring it to a gentle boil.
  4. Reduce the heat and toss in your shredded chicken and gnocchi. Simmer for 5-7 minutes.
  5. Add the fresh spinach and pour in the heavy cream. Cook for another 2-3 minutes.
  6. Season to taste with salt and black pepper. Serve immediately.

Notes

Feel free to customize with different vegetables or spices. For a vegetarian option, replace chicken with chickpeas and use vegetable broth.
