- 1 1/2 lbs lean ground beef
- 1 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1 Tbsp dried minced onion
- 1/2 cup breadcrumbs or panko crumbs
- 1 Tbsp olive or vegetable oil
- 3 Tbsp all-purpose flour or 1 1/2 Tbsp cornstarch
- 1 (15 oz) can diced tomatoes with juices
- 1 cup water
- 1/2 tsp salt
- 2 tsp granulated sugar
- 1 tsp dried basil leaves or Italian seasoning
- 1 1/2 lbs baby potatoes (halved)
- 1 cup carrots (chopped into 3-inch pieces)
- 1 medium yellow onion (chopped)
- 2 celery stalks (chopped)
Instructions
- In a bowl, combine beef, salt, pepper, egg, onion, and breadcrumbs. Mix gently, roll into 1-inch meatballs.
- In a skillet, heat oil and brown meatballs on all sides for about 6-8 minutes. Set aside.
- Add flour to the same skillet, stir to create a roux for 1-2 minutes. Gradually whisk in tomatoes, water, salt, sugar, basil, and simmer.
- Add potatoes, carrots, onion, celery, and meatballs to the skillet, stir to coat.
- Transfer to a casserole dish, cover with foil, and bake at 375°F (190°C) for 1 hour.
- Let rest for 5 minutes before serving. Optionally, sprinkle fresh herbs on top.
