Description

A heartwarming casserole featuring tender meatballs, buttery potatoes, and sweet carrots, enveloped in a rich, savory sauce.


Ingredients

  • 1 1/2 lbs lean ground beef
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1 Tbsp dried minced onion
  • 1/2 cup breadcrumbs or panko crumbs
  • 1 Tbsp olive or vegetable oil
  • 3 Tbsp all-purpose flour or 1 1/2 Tbsp cornstarch
  • 1 (15 oz) can diced tomatoes with juices
  • 1 cup water
  • 1/2 tsp salt
  • 2 tsp granulated sugar
  • 1 tsp dried basil leaves or Italian seasoning
  • 1 1/2 lbs baby potatoes (halved)
  • 1 cup carrots (chopped into 3-inch pieces)
  • 1 medium yellow onion (chopped)
  • 2 celery stalks (chopped)

Instructions

  1. In a bowl, combine beef, salt, pepper, egg, onion, and breadcrumbs. Mix gently, roll into 1-inch meatballs.
  2. In a skillet, heat oil and brown meatballs on all sides for about 6-8 minutes. Set aside.
  3. Add flour to the same skillet, stir to create a roux for 1-2 minutes. Gradually whisk in tomatoes, water, salt, sugar, basil, and simmer.
  4. Add potatoes, carrots, onion, celery, and meatballs to the skillet, stir to coat.
  5. Transfer to a casserole dish, cover with foil, and bake at 375°F (190°C) for 1 hour.
  6. Let rest for 5 minutes before serving. Optionally, sprinkle fresh herbs on top.
