Indulge in these luxurious No-Bake Paleo Millionaire Bars that are rich, creamy, and guilt-free, perfect for any occasion.


Ingredients

  • 1 1/2 cups blanched almond flour
  • 1/4 cup palm shortening (or butter)
  • 1 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup Medjool dates, pitted
  • 1/3 cup coconut cream
  • 1/4 cup sunflower seed butter
  • 1/2 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup sunflower seed butter

Instructions

  1. Line an 8×8 inch baking dish with parchment paper. Set aside.
  2. Soak the dates in hot water for 5 minutes.
  3. Prepare the crust: In a large bowl, combine almond flour, palm shortening, maple syrup, vanilla extract, and salt.
  4. Press the crust dough into the lined baking dish.
  5. Prepare the caramel filling: Drain the dates and blend with coconut cream, sunflower seed butter, and vanilla extract.
  6. Spread the caramel filling over the crust.
  7. Freeze while preparing the chocolate topping.
  8. Melt the chocolate chips in intervals and mix in sunflower seed butter.
  9. Spread the chocolate topping over the caramel layer.
  10. Refrigerate for at least 6 hours or until firm.
  11. Cut into 16 pieces and enjoy!

Notes

For best results, ensure your palm shortening is at room temperature. If the caramel is too thick, a splash of non-dairy milk can help.
