- 1 1/2 cups blanched almond flour
- 1/4 cup palm shortening (or butter)
- 1 Tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup Medjool dates, pitted
- 1/3 cup coconut cream
- 1/4 cup sunflower seed butter
- 1/2 tsp vanilla extract
- 1/2 cup dark chocolate chips
- 1/4 cup sunflower seed butter
Instructions
- Line an 8×8 inch baking dish with parchment paper. Set aside.
- Soak the dates in hot water for 5 minutes.
- Prepare the crust: In a large bowl, combine almond flour, palm shortening, maple syrup, vanilla extract, and salt.
- Press the crust dough into the lined baking dish.
- Prepare the caramel filling: Drain the dates and blend with coconut cream, sunflower seed butter, and vanilla extract.
- Spread the caramel filling over the crust.
- Freeze while preparing the chocolate topping.
- Melt the chocolate chips in intervals and mix in sunflower seed butter.
- Spread the chocolate topping over the caramel layer.
- Refrigerate for at least 6 hours or until firm.
- Cut into 16 pieces and enjoy!

For best results, ensure your palm shortening is at room temperature. If the caramel is too thick, a splash of non-dairy milk can help.
