A refreshing summer dessert featuring juicy fresh peaches in a creamy filling, all nestled in a graham cracker crust. This no-bake pie is quick to prepare and perfect for hot days when you don’t want to turn on the oven.

- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- Filling:
- 4 cups fresh peaches, peeled and sliced (about 6 medium peaches)
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 (8 oz) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/4 tsp ground cinnamon (optional)
- Topping:
- Additional peach slices for garnish
- Whipped cream (optional)
Instructions
- Make crust: Mix graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch pie plate. Chill for 30 minutes.
- Prepare peaches: Toss 2 cups of peach slices with granulated sugar and lemon juice. Set aside to macerate for 15 minutes.
- Make filling: Beat cream cheese, powdered sugar, and vanilla until smooth. In another bowl, whip cream to stiff peaks. Fold whipped cream into cream cheese mixture.
- Assemble: Drain macerated peaches (reserving juice). Spread half the cream mixture in crust. Top with drained peaches. Cover with remaining cream mixture.
- Chill: Refrigerate for at least 4 hours or overnight.
- Serve: Garnish with fresh peach slices and whipped cream if desired. Drizzle with reserved peach juice.
Notes
- For firmer slices, chill overnight
- Substitute 1/4 tsp almond extract for vanilla for different flavor
- Use ripe but firm peaches for best texture
- If peaches aren’t sweet enough, add 1-2 tbsp more sugar to macerating mixture
- Can substitute 1/2 cup Greek yogurt for half the cream cheese for tangier flavor
