Instructions

  1. Make crust: Mix graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch pie plate. Chill for 30 minutes.
  2. Prepare peaches: Toss 2 cups of peach slices with granulated sugar and lemon juice. Set aside to macerate for 15 minutes.
  3. Make filling: Beat cream cheese, powdered sugar, and vanilla until smooth. In another bowl, whip cream to stiff peaks. Fold whipped cream into cream cheese mixture.
  4. Assemble: Drain macerated peaches (reserving juice). Spread half the cream mixture in crust. Top with drained peaches. Cover with remaining cream mixture.
  5. Chill: Refrigerate for at least 4 hours or overnight.
  6. Serve: Garnish with fresh peach slices and whipped cream if desired. Drizzle with reserved peach juice.
