- 1 1/2 cups crushed Speculoos cookies
- 8 oz white chocolate, melted
- Extra Speculoos crumbs for decoration
Instructions
- Mix crushed cookies and cream cheese until well combined
- Form mixture into 1-inch balls and place on parchment-lined baking sheet
- Refrigerate for 30 minutes until firm
- Melt white chocolate and stir in Biscoff spread until smooth
- Dip chilled truffles in chocolate mixture to coat completely
- Return to baking sheet and sprinkle with extra cookie crumbs
- Let set at room temperature for 30 minutes before serving
