- 2 cups shredded coconut
- 1/4 cup cocoa powder
- 1/2 cup coconut oil
- 1/4 cup maple syrup or honey
- 1/2 cup yogurt-covered raisins
Instructions
- Combine the shredded coconut and cocoa powder in a large bowl until evenly distributed.
- Melt the coconut oil in the microwave for about 20 to 30 seconds.
- Add the melted coconut oil and maple syrup or honey to the bowl and mix until well combined.
- Scoop about 3 tablespoons of the mixture and press into a muffin tin to form nests.
- Use a butter knife to carve out a small well in each cookie.
- Chill in the freezer for at least 30 minutes to set.
- Remove from the muffin tin and decorate each nest with yogurt-covered raisins.
- Serve immediately or store in an airtight container.
Notes
Ensure coconut oil is at room temperature for easier mixing. If using honey, warm it slightly for better incorporation.
