Description

Delightful no-bake cookies that resemble bird’s nests, combining shredded coconut, cocoa powder, and yogurt-covered raisins for a whimsical treat perfect for sharing.


Ingredients

Scale
  • 2 cups shredded coconut
  • 1/4 cup cocoa powder
  • 1/2 cup coconut oil
  • 1/4 cup maple syrup or honey
  • 1/2 cup yogurt-covered raisins

Instructions

  1. Combine the shredded coconut and cocoa powder in a large bowl until evenly distributed.
  2. Melt the coconut oil in the microwave for about 20 to 30 seconds.
  3. Add the melted coconut oil and maple syrup or honey to the bowl and mix until well combined.
  4. Scoop about 3 tablespoons of the mixture and press into a muffin tin to form nests.
  5. Use a butter knife to carve out a small well in each cookie.
  6. Chill in the freezer for at least 30 minutes to set.
  7. Remove from the muffin tin and decorate each nest with yogurt-covered raisins.
  8. Serve immediately or store in an airtight container.

Notes

Ensure coconut oil is at room temperature for easier mixing. If using honey, warm it slightly for better incorporation.
