Description
Crispy roasted new potatoes tossed with smoky bacon, fresh herbs, and garlic for a flavorful side dish that pairs perfectly with any main course.
Ingredients
- 2 lbs New Potatoes
- 12 oz Bacon
- 1 cup Scallions (chopped)
- 3 tbsp Fresh Dill (chopped)
- 1 tbsp Sea Salt
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large skillet over medium heat, cook bacon until crispy (5-7 minutes). Transfer to paper towels, reserving 1 tbsp bacon fat.
- In a large bowl, toss potatoes with olive oil, reserved bacon fat, garlic, rosemary, thyme, salt, and pepper.
- Spread potatoes in single layer on prepared baking sheet. Roast for 25 minutes.
- Remove from oven, stir potatoes, and roast for 10-15 more minutes until golden and crispy.
- Transfer to serving bowl, toss with crispy bacon and garnish with fresh parsley.
Notes
- For crispier potatoes, don’t overcrowd the baking sheet.
- Can substitute pancetta for bacon if preferred.
- Best served immediately while hot and crispy.
