Description

Crispy roasted new potatoes tossed with smoky bacon, fresh herbs, and garlic for a flavorful side dish that pairs perfectly with any main course.


Ingredients

  • 2 lbs New Potatoes
  • 12 oz Bacon
  • 1 cup Scallions (chopped)
  • 3 tbsp Fresh Dill (chopped)
  • 1 tbsp Sea Salt

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, cook bacon until crispy (5-7 minutes). Transfer to paper towels, reserving 1 tbsp bacon fat.
  3. In a large bowl, toss potatoes with olive oil, reserved bacon fat, garlic, rosemary, thyme, salt, and pepper.
  4. Spread potatoes in single layer on prepared baking sheet. Roast for 25 minutes.
  5. Remove from oven, stir potatoes, and roast for 10-15 more minutes until golden and crispy.
  6. Transfer to serving bowl, toss with crispy bacon and garnish with fresh parsley.

Notes

  • For crispier potatoes, don’t overcrowd the baking sheet.
  • Can substitute pancetta for bacon if preferred.
  • Best served immediately while hot and crispy.
