Description

A wholesome and flavorful Mushroom Quinoa Salad combining quinoa, earthy mushrooms, and fresh herbs for a comforting meal.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh herbs (parsley, basil, or cilantro)
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Rinse the quinoa under cold water for a minute. In a medium saucepan, combine quinoa and vegetable broth or water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed.
  2. Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and minced garlic, sauté for 5-7 minutes until mushrooms are tender.
  3. Once the quinoa is cooked, fluff it with a fork and fold it into the skillet with sautéed mushrooms. Add fresh herbs, salt, and pepper; stir to combine.
  4. If using, add cherry tomatoes and feta cheese, folding them in gently. Serve warm or chill in the fridge for later.

Notes

For added flavor, consider a splash of lemon juice or zest before serving. This salad can be stored in the fridge for up to 4 days.
