- 9 oz spaghetti
- 1/2 cup extra-virgin olive oil
- 7 oz button mushrooms, sliced
- 3.5 oz oyster mushrooms, sliced
- 10 cloves garlic, thinly sliced
- 1 1/2 tsp chili flakes
- 2 1/2 tsp fresh parsley, chopped
- 3 tbsp grated parmesan
- Salt, to taste
- 1/2 tsp lemon zest
Instructions
- Boil a large pot of salted water and add spaghetti, cooking until al dente (8-10 minutes). Reserve a cup of pasta water and drain.
- Clean the mushrooms and slice evenly.
- In a skillet, heat 2 tablespoons of olive oil over medium-high heat, add sliced mushrooms and salt, cooking until browned (5-7 minutes), then set aside.
- In the same skillet, pour in the remaining olive oil, add sliced garlic, and sauté on low heat until golden and fragrant (2-3 minutes).
- Stir in chili flakes and reserved pasta water, simmering for a minute.
- Return the sautéed mushrooms to the skillet, add cooked spaghetti, and toss to coat with garlic oil (1-2 minutes).
- Plate the pasta, topping with grated parmesan, chopped parsley, and lemon zest. Serve immediately.
Notes
Avoid overcrowding the mushrooms in the skillet for perfect browning. Store leftovers in an airtight container in the fridge for up to 3 days.
