Ingredients

- 1 cup pearl barley
- 8 ounces mushrooms, sliced
- 1 onion, chopped
- 3 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 2 cups spinach or kale
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions, carrots, and celery, sautéing until soft, about 5 minutes.
- Stir in the garlic and mushrooms, cooking until the mushrooms are browned and fragrant, approximately 6-8 minutes.
- Add the pearl barley, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and let simmer for about 45 minutes or until the barley is tender.
- Stir in the spinach or kale, allowing it to wilt for an additional 5 minutes.
- Remove the bay leaf before serving and enjoy your wholesome mushroom barley soup!
Notes
