Ingredients

  • 500 g firm, ripe mulberries
  • 500 g sugar
  • Juice of 1/2 lemon

Instructions

  1. Prepare the mulberries by pulling off all the stems and adding them to a large heavy-bottomed saucepan.
  2. Crush the berries over medium heat with a fork or potato masher to release their juices.
  3. Bring the mixture to a gentle boil.
  4. Add sugar and lemon juice, stirring until completely dissolved.
  5. Boil for five minutes, watching carefully to prevent scorching.
  6. Transfer the hot jam into sterilized jars using a funnel, and seal with lids immediately.
  7. Cool down jars upside down to create a vacuum seal.
  8. Store in a cool, dark place for up to two years.

Notes

Use organic cane sugar for a more natural flavor. Consider substituting sugar with monk fruit for a lower glycemic index.
