Ingredients

  • 1 pound ground beef or lamb
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1/2 cup feta cheese, crumbled
  • Tzatziki sauce for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the meatballs by combining ground beef or lamb, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper in a bowl. Shape into golf-ball-sized meatballs.
  3. Bake the meatballs on a lined baking sheet for 20-25 minutes, until golden brown.
  4. Assemble the bowls by placing cooked quinoa or rice at the bottom, then add cucumber, cherry tomatoes, olives, and the baked meatballs.
  5. Finish with crumbled feta cheese and tzatziki sauce. Serve immediately and enjoy!
