A delightful Greek-inspired meatball bowl served over quinoa or rice, loaded with fresh veggies and tzatziki sauce.

- 1 pound ground beef or lamb
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cooked quinoa or rice
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced black olives
- 1/2 cup feta cheese, crumbled
- Tzatziki sauce for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the meatballs by combining ground beef or lamb, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper in a bowl. Shape into golf-ball-sized meatballs.
- Bake the meatballs on a lined baking sheet for 20-25 minutes, until golden brown.
- Assemble the bowls by placing cooked quinoa or rice at the bottom, then add cucumber, cherry tomatoes, olives, and the baked meatballs.
- Finish with crumbled feta cheese and tzatziki sauce. Serve immediately and enjoy!
Notes
For a vegetarian option, substitute meat with a mix of chickpeas, grated zucchini, and shredded carrots.
