Description
A traditional Italian mortadella sandwich with creamy burrata, pistachio pesto, and peppery arugula on crusty ciabatta – an elevated take on the classic Bologna sandwich.
Ingredients

4 slices Mortadella
2 slices Italian Bread
1 tablespoon Aioli or Mustard
1 cup Fresh Greens
1 medium Tomato
Instructions
- Slice ciabatta roll horizontally and lightly toast if desired.
- Spread pistachio pesto on bottom half of bread.
- Layer mortadella slices (folded for texture), then tear burrata over the meat.
- Toss arugula with olive oil, lemon zest and salt. Pile on top of burrata.
- Drizzle with balsamic glaze if using. Close sandwich and press gently.
- Cut diagonally and serve immediately.
Notes
- Pistachio Pesto: Blend 1/4 cup shelled pistachios, 1/4 cup basil, 1 garlic clove, 2 tbsp Parmesan, 3 tbsp olive oil, salt to taste
- For authentic flavor, seek out mortadella with pistachio pieces
- Substitute fresh mozzarella if burrata is unavailable
- Add sliced pickled peppers for a spicy kick
