Description

Deliciously moist zucchini bars topped with a velvety caramel frosting, perfect for any occasion.


Ingredients

  • 2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs, at room temperature
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • For the Caramel Frosting:
  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt (optional)
  • Optional Add-Ins: 1/2 cup chopped walnuts or pecans, 1/2 cup mini chocolate chips, dash of cloves

Instructions

  1. Prep the zucchini by washing and grating it; blot with paper towels to remove excess moisture.
  2. In a large mixing bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth and creamy.
  3. In another bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, and optional spices; mix well.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the grated zucchini and any optional add-ins.
  6. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  7. Pour the batter into the prepared pan and spread it evenly.
  8. Bake for 25-30 minutes until a toothpick inserted into the center comes out clean.
  9. For the caramel frosting, melt butter in a saucepan, add brown sugar, then stir in milk and whisk in powdered sugar and vanilla after cooling slightly.
  10. Once the bars are cooled, pour the caramel frosting over and let it set before slicing. Enjoy!

Notes

These bars store well in an airtight container at room temperature or in the fridge. Freezing is also an option.
