Description

A soft and fluffy gluten-free cake bursting with fresh lemon flavor, made with Greek yogurt and almond flour.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup plain Greek yogurt
  • 2 large eggs
  • ⅓ cup honey or maple syrup
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×4-inch loaf pan with parchment paper.
  2. Whisk together the eggs, Greek yogurt, honey or maple syrup, lemon juice, lemon zest, and vanilla extract until combined.
  3. Combine almond flour, baking powder, and salt in a separate bowl.
  4. Mix the dry ingredients into the wet mixture until a thick batter forms.
  5. Bake for 35-45 minutes or until golden and a toothpick comes out mostly clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack for 20 minutes.
  7. Serve with a dusting of powdered sugar or drizzle of honey.
