Instructions

- Knead for about 5 minutes until smooth and pliable.
- Roll the dough into small balls, then flatten each ball with a rolling pin.
- Press each tortilla round into a muffin tin to create a small shell.
- Bake for 10 minutes until golden brown.
- Heat a cast iron skillet on medium-high. Add diced onions and cook until translucent.
- Add ground beef and spices, cooking until browned and fully cooked (about 5-7 minutes). Drain excess fat.
- Fill each tortilla cup with zesty ground beef. Sprinkle cheddar cheese on top.
- Return to the oven for 5-7 minutes or until cheese is melted.
- Remove from the oven, let cool slightly, and top with sour cream, cilantro, and jalapeños before serving.
