Description

These Mini No-Bake Malteser Cheesecakes are rich and creamy with a delightful crunch, evoking sweet childhood memories in every bite.


Ingredients

  • 200g Digestive Biscuits (or Graham crackers)
  • 100g Unsalted Butter, melted
  • 300g Cream Cheese, softened
  • 150ml Heavy Cream, whipped to soft peaks
  • 100g Maltesers, crushed (plus more for topping)
  • 80g Icing Sugar (to taste)
  • 1 tsp Vanilla Extract
  • Extra Maltesers (for garnish)

Instructions

  1. Crush the digestive biscuits in a food processor until fine crumbs.
  2. Melt the butter in a small saucepan over low heat and combine it with the biscuit crumbs.
  3. Spoon the mixture into mini cheesecake cups or a muffin tin lined with cupcake liners, pressing down firmly.
  4. In a large bowl, beat the softened cream cheese until smooth, then gradually add icing sugar and vanilla extract.
  5. Gently fold in the whipped cream and crushed Maltesers until combined.
  6. Spoon the cheesecake mixture over the biscuit bases and smooth the tops.
  7. Cover and chill in the fridge for at least 2 hours until set.
