- 200g Digestive Biscuits (or Graham crackers)
- 100g Unsalted Butter, melted
- 300g Cream Cheese, softened
- 150ml Heavy Cream, whipped to soft peaks
- 100g Maltesers, crushed (plus more for topping)
- 80g Icing Sugar (to taste)
- 1 tsp Vanilla Extract
- Extra Maltesers (for garnish)
Instructions
- Crush the digestive biscuits in a food processor until fine crumbs.
- Melt the butter in a small saucepan over low heat and combine it with the biscuit crumbs.
- Spoon the mixture into mini cheesecake cups or a muffin tin lined with cupcake liners, pressing down firmly.
- In a large bowl, beat the softened cream cheese until smooth, then gradually add icing sugar and vanilla extract.
- Gently fold in the whipped cream and crushed Maltesers until combined.
- Spoon the cheesecake mixture over the biscuit bases and smooth the tops.
- Cover and chill in the fridge for at least 2 hours until set.
