- 1/2 cup Granulated Sugar (for batter) + 1/2 cup (for coating)
- 1 tsp Cinnamon
- 1 1/2 cups All-Purpose Flour
- 1 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 tsp Nutmeg
- 1/3 cup Vegetable Shortening (room temperature)
- 1 Large Egg (room temperature)
- 1/2 cup Milk (whole or almond)
- 1/2 cup Unsalted Butter (melted, for dipping)
Instructions
- Preheat your oven to 350ºF and adjust the oven rack to the 2nd level position.
- Generously spray a 24-cavity mini muffin pan with a flour-based baking spray.
- In a small bowl, whisk together 1/2 cup of granulated sugar and 1 tsp of cinnamon for the coating.
- In a separate bowl, whisk together the flour, baking powder, salt, and nutmeg.
- In a stand mixer, beat the vegetable shortening and 1/2 cup of granulated sugar on medium-high speed until light and fluffy (2-3 minutes).
- Add the egg and mix until well combined.
- Reduce mixer speed to low and alternately add the milk and dry mixture until just combined.
- Divide the batter into the mini muffin cavities using a medium-size cookie scoop.
- Bake for 13-15 minutes or until light golden brown on top.
- Immediately roll each puff in melted butter, then coat with the cinnamon sugar mix. Serve warm.
