- Pie Crust: Store-bought or homemade with all-purpose flour and cold butter
- 3–4 medium apples, peeled, cored, and diced
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1 tablespoon lemon juice
- A pinch of salt
- 2 tablespoons unsalted butter, melted
Instructions
- Prepare the Pie Crust: Roll out the dough to about 1/8 inch thick and cut into 5-inch circles (about 12). Preheat oven to 400°F (200°C).
- Make the Filling: In a bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and salt.
- Assemble the Pies: Place 1-2 tablespoons of the apple mixture in the center of each dough circle and crimp the edges with a fork.
- Bake: Place on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
- Cool & Serve: Let the pies cool for 5-10 minutes and optionally dust with powdered sugar before serving.
Notes
These mini pies can be customized with different flavors and stored for up to 2 days at room temperature or 1 week in the fridge.
