Description

A creamy and zesty dip inspired by traditional Mexican street corn, perfect for sharing with tortilla chips.


Ingredients

  • 2 cups corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup queso fresco, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. Combine the corn, mayonnaise, sour cream, queso fresco, cilantro, lime juice, chili powder, salt, and pepper in a large bowl.
  2. Mix well with a spatula until all ingredients are uniformly blended.
  3. Transfer the dip to a serving bowl and chill in the refrigerator for at least 30 minutes.
  4. Serve with crispy tortilla chips and enjoy!

Notes

For added creaminess, consider blending in avocado or using Greek yogurt instead of sour cream.
