Description

A simple yet elegant recipe highlighting the sweet and buttery flavors of sole, enhanced with lemon and cooked in a rich brown butter sauce.


Ingredients

  • 2 sole fillets
  • 1/4 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the Sole Fillets with salt and pepper on both sides and let sit for 5 minutes.
  2. Dredge the fillets in flour, shaking off the excess.
  3. Melt 2 tablespoons of butter in a large skillet over medium heat.
  4. Add the fillets and cook for 2-3 minutes per side until golden brown.
  5. Remove the fillets and keep warm on a plate.
  6. In the same skillet, add the remaining butter and lemon juice, cooking until the butter is browned.
  7. Pour the brown butter sauce over the fillets and garnish with parsley before serving.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. Serve with a light arugula salad or roasted vegetables.
