- 4 boneless, skinless chicken breasts (6–8 oz each)
- 8 oz cream cheese, softened
- 2 cups cooked spinach, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (mozzarella, cheddar, or feta)
- 1 tbsp fresh herbs, chopped (parsley, basil, or thyme)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts between plastic wrap until they are about ½ inch thick.
- In a large bowl, combine cream cheese, cooked spinach, minced garlic, shredded cheese, fresh herbs, salt, and pepper. Mix until well combined.
- Lay each chicken breast flat and add about ⅓ cup of filling to the center. Fold the sides over and roll tightly, securing with toothpicks or kitchen twine.
- Brush each chicken roll with olive oil and season with paprika, garlic powder, salt, and pepper.
- Place the stuffed chicken seam-side down in a baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5-10 minutes after baking before serving.
Notes
Use organic, free-range chicken for better flavor. You can customize the cheese and herbs to suit your taste.
