Description

Ingredients

– 1 cup quinoa
– 1 lemon
– 1 teaspoon oregano
– 3/4 teaspoon kosher salt
– 1/4 teaspoon black pepper
– 1/4 cup extra virgin olive oil
– 4 scallions (white and green parts)
– 2 bell peppers (red, yellow, or orange)
– 1/2 cup pitted Kalamata olives (drained)
– 1 English cucumber
– 1/2 cup crumbled feta cheese


Instructions

  1. Cook quinoa according to package instructions using water or broth. Let cool.
  2. In a large bowl, combine cooled quinoa, cucumber, tomatoes, red onion, olives, feta, parsley, and mint.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour dressing over salad and toss to combine.
