A healthy and quick Mediterranean dish combining salmon and orzo pasta with zesty lemon flavor.
Ingredients

- 2 salmon fillets
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 lemon (zest and juice)
- 2 tablespoons olive oil
- 1 garlic clove (minced)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Season salmon with salt and pepper, cook skin-side down for about 5 minutes per side until cooked through.
- Add minced garlic to the skillet, sauté for 1 minute. Add orzo and vegetable broth, bring to a boil and then simmer according to package instructions until al dente (8-10 minutes).
- Stir in lemon juice and zest, add salmon back into the skillet and heat through for about a minute.
- Serve warm, garnished with fresh parsley.
Notes
Allow salmon to sit at room temperature for 15 minutes before cooking. Rinse orzo under cold water before cooking to prevent clumping.
