Description

A healthy and quick Mediterranean dish combining salmon and orzo pasta with zesty lemon flavor.


Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon (zest and juice)
  • 2 tablespoons olive oil
  • 1 garlic clove (minced)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Season salmon with salt and pepper, cook skin-side down for about 5 minutes per side until cooked through.
  2. Add minced garlic to the skillet, sauté for 1 minute. Add orzo and vegetable broth, bring to a boil and then simmer according to package instructions until al dente (8-10 minutes).
  3. Stir in lemon juice and zest, add salmon back into the skillet and heat through for about a minute.
  4. Serve warm, garnished with fresh parsley.

Notes

Allow salmon to sit at room temperature for 15 minutes before cooking. Rinse orzo under cold water before cooking to prevent clumping.
