- 1 pound green beans (trimmed and chopped into 2-inch pieces)
- 2/3 cup sun-dried tomatoes (drained)
- 2/3 cup Kalamata olives (pitted and sliced)
- 1/4 cup red onion (thinly sliced)
- 3 ounces feta cheese (crumbled)
- 4 Tbsp olive oil or avocado oil
- 2 Tbsp lemon juice or balsamic vinegar
- 1 tsp lemon zest
- Sea salt to taste
- Black pepper to taste
Instructions
- Bring a large pot of water to a rolling boil.
- Blanch the green beans for 1-2 minutes until they are bright and crisp.
- Immediately transfer the beans to an ice bath to stop the cooking process.
- In a small bowl, combine olive oil, lemon zest, and lemon juice (or balsamic vinegar) to make the dressing.
- In a large mixing bowl, combine the drained green beans, sun-dried tomatoes, Kalamata olives, and red onion.
- Pour the dressing over the salad and toss gently until well coated.
- Crumble feta over the top, adding sea salt and black pepper to taste.
- Serve immediately or chill before serving for enhanced flavors.
