Description

A vibrant and refreshing Mediterranean Green Bean Salad featuring sun-dried tomatoes, Kalamata olives, and feta cheese, perfect for any occasion.


Ingredients

  • 1 pound green beans (trimmed and chopped into 2-inch pieces)
  • 2/3 cup sun-dried tomatoes (drained)
  • 2/3 cup Kalamata olives (pitted and sliced)
  • 1/4 cup red onion (thinly sliced)
  • 3 ounces feta cheese (crumbled)
  • 4 Tbsp olive oil or avocado oil
  • 2 Tbsp lemon juice or balsamic vinegar
  • 1 tsp lemon zest
  • Sea salt to taste
  • Black pepper to taste

Instructions

  1. Bring a large pot of water to a rolling boil.
  2. Blanch the green beans for 1-2 minutes until they are bright and crisp.
  3. Immediately transfer the beans to an ice bath to stop the cooking process.
  4. In a small bowl, combine olive oil, lemon zest, and lemon juice (or balsamic vinegar) to make the dressing.
  5. In a large mixing bowl, combine the drained green beans, sun-dried tomatoes, Kalamata olives, and red onion.
  6. Pour the dressing over the salad and toss gently until well coated.
  7. Crumble feta over the top, adding sea salt and black pepper to taste.
  8. Serve immediately or chill before serving for enhanced flavors.
