  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Fresh parsley for garnish (optional)

Instructions

  1. In a bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Add chicken thighs and coat evenly. Marinate in the refrigerator for at least 30 minutes.
  2. Heat a skillet over medium-high heat. Cook the chicken thighs for 5-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
  3. While chicken cooks, prepare tzatziki sauce by combining Greek yogurt, crumbled feta, lemon juice, minced garlic, salt, and pepper in a bowl. Stir until smooth.
  4. Let the cooked chicken rest for a few minutes, then slice into strips.
  5. Warm the pita breads slightly. Spread a layer of tzatziki on each pita, then add sliced chicken, cherry tomatoes, diced cucumber, and red onion.
  6. Roll up the pitas and garnish with fresh parsley if desired. Serve immediately.
