- 1 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1 tablespoon lemon juice

Instructions
- In a bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Add chicken thighs and coat evenly. Marinate in the refrigerator for at least 30 minutes.
- Heat a skillet over medium-high heat. Cook the chicken thighs for 5-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
- While chicken cooks, prepare tzatziki sauce by combining Greek yogurt, crumbled feta, lemon juice, minced garlic, salt, and pepper in a bowl. Stir until smooth.
- Let the cooked chicken rest for a few minutes, then slice into strips.
- Warm the pita breads slightly. Spread a layer of tzatziki on each pita, then add sliced chicken, cherry tomatoes, diced cucumber, and red onion.
- Roll up the pitas and garnish with fresh parsley if desired. Serve immediately.
