- 6 large eggs
- 1 lb sausage (turkey, pork, or plant-based)
- 1–2 bell peppers, diced
- 2 medium potatoes, diced
- 1 medium onion, diced
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Dice the potatoes, onions, and bell peppers.
- Cook the sausage in a skillet over medium heat for 5-7 minutes, breaking it up until golden.
- Sauté the diced potatoes and onions in a separate pan with 1 tbsp of olive oil for 10-12 minutes until tender.
- Add the diced bell peppers to the pan and sauté for an additional 2-3 minutes.
- Whisk the eggs in a bowl until pale and frothy.
- Pour the egg mixture over the sausage and sautéed vegetables, cooking for 3-5 minutes until just set.
- Serve immediately or store in bowls for meal prep.
