- 1 ½ cups all-purpose flour
- 1 tbsp high-quality matcha powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup organic cane sugar
- 1/4 cup light brown sugar, packed
- 1/2 cup refined coconut oil, melted
- 1/4 cup unsweetened plant-based milk (almond, oat, or soy)
- 1 tsp vanilla extract
- Raw sugar or turbinado sugar for sprinkling
- Extra pinch of matcha for finishing (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking trays with parchment paper.
- In a medium bowl, whisk together the flour, matcha powder, baking soda, and salt until evenly combined.
- In a large mixing bowl, combine melted coconut oil, cane sugar, and brown sugar. Whisk until smooth, then add plant-based milk and vanilla extract.
- Gradually stir the dry ingredients into the wet mixture using a spatula until no dry streaks remain.
- Scoop portions of the dough (about 1.5 tablespoons each), roll them into balls, and place on lined baking trays, spacing them about 2 inches apart. Press the tops lightly to flatten slightly.
- Bake for 10-12 minutes until the edges are set and centers puff slightly.
- Let the cookies cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
- Store leftovers in an airtight container for up to 4 days.
Notes
Feel free to add chocolate chips, nuts, or dried fruits for added flavor! Chilling the dough can help achieve a better shape while baking.
