Description

Delicious and easy-to-make Matcha Cookies that blend sweetness with the earthy flavor of matcha, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tbsp high-quality matcha powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup organic cane sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 cup refined coconut oil, melted
  • 1/4 cup unsweetened plant-based milk (almond, oat, or soy)
  • 1 tsp vanilla extract
  • Raw sugar or turbinado sugar for sprinkling
  • Extra pinch of matcha for finishing (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking trays with parchment paper.
  2. In a medium bowl, whisk together the flour, matcha powder, baking soda, and salt until evenly combined.
  3. In a large mixing bowl, combine melted coconut oil, cane sugar, and brown sugar. Whisk until smooth, then add plant-based milk and vanilla extract.
  4. Gradually stir the dry ingredients into the wet mixture using a spatula until no dry streaks remain.
  5. Scoop portions of the dough (about 1.5 tablespoons each), roll them into balls, and place on lined baking trays, spacing them about 2 inches apart. Press the tops lightly to flatten slightly.
  6. Bake for 10-12 minutes until the edges are set and centers puff slightly.
  7. Let the cookies cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
  8. Store leftovers in an airtight container for up to 4 days.

Notes

Feel free to add chocolate chips, nuts, or dried fruits for added flavor! Chilling the dough can help achieve a better shape while baking.
