A flavorful twist on a classic comfort food, this Massaman Curry Meatloaf combines traditional Thai spices with savory meatloaf for an unforgettable meal.

- 150 g potato, peeled and diced
- A pinch of salt
- 3/4 cup coconut milk, divided
- 50 g Massaman curry paste or homemade
- 1 lb (450 g) lean ground beef
- 1 cup chopped onion
- 1/2 cup dry bread crumbs
- 1 egg, beaten
- 2 Tbsp light brown sugar, packed
- 1 1/2 Tbsp fish sauce
- 2 Tbsp cooking tamarind or 1 Tbsp Worcestershire sauce
- Julienned red bell pepper for garnish
- Jasmine rice for serving
- 1/3 cup coconut milk (for the sauce)
- 2 tsp light brown sugar, packed (for the sauce)
- 1–3 tsp fish sauce (for the sauce)
- 1/4 cup roasted peanuts, unsalted
- 50 g Thai red curry paste
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/8 tsp ground nutmeg
- 1/4 tsp ground cardamom
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the diced potatoes in salted water for 4-5 minutes until tender. Drain and set aside.
- Bring 1/2 cup of coconut milk to a boil in a sauté pan, stir in the curry paste and cook until thickened, about 2-3 minutes.
- Cook the chopped onions in the same pan until translucent, about 5 minutes. Let cool.
- Mix ground beef, bread crumbs, beaten egg, 1/4 cup coconut milk, brown sugar, fish sauce, and tamarind in a large bowl. Knead gently.
- Fold in the boiled potatoes without mashing them.
- Transfer the mixture into a greased loaf pan and bake for 50-60 minutes until the internal temperature reaches 155°F (68°C).
- Combine the reserved curry paste with 1/3 cup coconut milk, brown sugar, and tamarind for the sauce, cooking until thick, about 5 minutes.
- Add chopped peanuts to the sauce and adjust seasoning.
- Serve the meatloaf drizzled with the sauce and garnished with bell pepper and jasmine rice.
Notes
Use fresh ingredients for better flavor. This dish can be made ahead and stored in the refrigerator for up to 4 days.
