A delicious fusion of Thai flavors and classic American comfort food centered around a juicy ground beef patty topped with aromatic Massaman curry sauce.


Ingredients

  • 1/4 large onion, finely minced (optional)
  • 1 Tbsp fish sauce
  • 1 tsp ground black pepper
  • 3/4 large onion, julienned
  • A pinch of salt
  • 1 medium russet potato, thinly sliced
  • 4 burger buns
  • Pickled hot peppers or regular burger pickles (optional)
  • Lettuce (optional)
  • 1 cup coconut milk, divided
  • 50g Massaman curry paste
  • 1 Tbsp + 1 tsp light brown sugar, tightly packed
  • 1 Tbsp cooking tamarind (or Worcestershire sauce)
  • 13 tsp fish sauce, as needed
  • 1/4 cup finely chopped roasted peanuts
  • 50g Thai red curry paste
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/8 tsp ground nutmeg
  • 1/4 tsp ground cardamom

Instructions

  1. Prepare the burger patties: In a mixing bowl, combine the ground beef, minced onion, fish sauce, and black pepper. Mix gently but thoroughly; form into 4 patties and let them rest in the refrigerator for at least 30 minutes.
  2. Sauté the onions: Heat a skillet over medium heat with oil. Add the julienned onion, sprinkle with salt, and sauté until caramelized (about 8–10 minutes).
  3. Crispy potato slices: Layer the potato slices in a skillet and cover for 2 minutes until golden brown, then flip and cook until crispy.
  4. Make the curry sauce: In a pot, warm 1/3 cup coconut milk, stir in Massaman curry paste, and simmer until thickened (about 3–4 minutes). Add remaining ingredients and stir in the chopped peanuts.
  5. Cook the burger patties: Heat a grill or skillet over medium-high heat and cook patties for about 4 minutes on each side.
  6. Assemble the burgers: Toast the buns if desired, load with lettuce, place the patty, and drizzle with curry sauce. Add crispy potato slices and any additional toppings.

Notes

For an extra kick, add more chili paste. Use fresh, high-quality ingredients for the best flavor.
